Mango Chutney is one of many chutney condiments that we use with many of our dishes.
Ingredients:
* 4 cups half ripe mangoes (diced)
* 1 cup raisins
* 4 oz green ginger, chopped
* 1 teaspoon mustard seed
* 4 cups sugar
* 2 oz salt
* 2 cloves garlic,minced
* 2 hot peppers, chopped
* 4 cups vinegar
* 1/2 lb onions, chopped
Method:
1. Add fruit and peppers to vinegar and allow to steep until the next day.
2. Add sugar, ginger, garlic,onions and other seasonings to Mangoes .
3. Boil all ingredients together gently stirring until Chutney is thick and brown.
