Saffron Rice (Savoury Rice)       

Rice is a very popular part of our everyday meals especially in Trinidad and Guyana. This is a very simple recipe. This dish can be used as a side dish for Bar B que or with regular stewed meats.


2 cups Rice

1 tin mixed vegaetables,

1 tin corn (whole grain)


2 ozs Sultanas/raisins (optional)

2 tablespoons cooking butter(optional0

1 tablespoon saffron powder,

1 table spoon oil



Place rice with salt ( to taste) in pot to boil,

When boiled strain Rice,(cooked and strained rice must be grainy)

Mix safron powder in a little hot water

Heat pot

Add a little oil

Pour melted safron into hot pot,

Add rice to pot

Add vegetables and cooking butter(optional) stir,

Turn off fire.

Serve with meat and vegetable dishes.
