Garlic Pork is believed to be one of our Spanish Christmas favorites.
Ingredients:
¼ pound garlic cloves, peeled and chopped
2 tablespoons fresh thyme dried thyme Minced or finely chopped
2 onions, chopped fine
1 hot pepper seeds and stem removed, chopped
2 teaspoons salt
1 lime Juiced
2 cups white vinegar
4 pounds boneless pork leg or shoulder, cut into 1inch cubes
vegetable oil for frying
Method:
Mix all the ingredients except pork and oil and mince in blender. Pour the mixture over the pork and marinate, covered, in a nonmetallic bowl in the refrigerator 2 days to1 week.
Drain the pork and dry. Heat the oil in a frying pan and fry the pork cubes, turning often, until they are browned on all sides, about 5 to 7 minutes.
Place pork on paper towels, and serve warm with a fruit salad.
