The region seas are bountiful and the rich soil bring forth abundantly. Our recipes reflect the creativity of our ancestors and their ability to take local fruits and ground provision and convert it into fantastic tasting dishes.
Fish and seafood is an integral part of our diet, being small islands we are blessed to be surrounded by bountiful seas. The menu varies from island to island. Although different our dishes are very similar the ingredients are the same but the results are different the taste is great. The variety of seasoning herbs and spices is evident in the taste of our foods.
The racial and cosmopolitan mix of our people is reflected in our dishes, here you can find a meal that consists of curry dishes,creole stews and ground provision, with spanish pastelles added to the mix.
